Mexican-Inspired Stuffed Bell Peppers
Today, we're going to make Mexican-inspired stuffed bell peppers, a dish that's easy, simple, and sure to impress. Let's dive into the recipe and create a flavorful and satisfying meal.

Ingredients:
- Bell peppers
- Jalapeno
- Onion
- Saffron rice
- Lean ground meat (bison or any ground red meat)
- Black beans
- Seasonings (cumin, chili powder, garlic powder, onion powder, salt, pepper)
- Garnishes (avocado, cilantro)

Instructions:
1. Preheat the oven to 375°F.
2. Cut the tops off the bell peppers and remove the seeds and membranes, keeping the peppers intact for stuffing.
3. In a pan, sauté diced onions until translucent. Add the saffron rice and toast it for extra flavor.
4. Pour in bone broth and let the rice cook until it absorbs the liquid.


5. In a separate pan, cook the lean ground meat with a variety of seasonings such as cumin, chili powder, garlic powder, onion powder, salt, and pepper.
6. Once the meat is cooked, add black beans and diced jalapenos for an extra kick of flavor.
7. Combine the cooked meat mixture with the saffron rice in a large bowl.
8. Carefully stuff the bell peppers with the meat and rice mixture, ensuring they are filled to the top.

Ingredients:
- Plain Greek yogurt
- Lime juice
- Hot sauce (sriracha)
- Seasonings (onion powder, garlic salt)

Instructions:
1. In a bowl, combine plain Greek yogurt with lime juice and hot sauce to taste.
2. Add a pinch of onion powder and garlic salt for extra flavor.
3. Mix well and refrigerate until ready to serve.

Red Beer (Michelada):
To accompany our Mexican-inspired dish, we'll prepare a refreshing red beer, also known as a Michelada.

Ingredients:
- Bloody Mary mix
- Beer of your choice (Corona recommended)
- Pickled asparagus
- Pickles
- Lime wedges
- Ice

Instructions:
1. In a clear glass or beer stein, combine Bloody Mary mix with your choice of beer.
2. Add a splash of Worcestershire sauce, hot sauce, pepper, and salt for seasoning.
3. Garnish with pickled asparagus, pickles, and a lime wedge.
4. Serve over ice for a refreshing and flavorful red beer.

Garnish and Serve:
Once the stuffed bell peppers are cooked to perfection, garnish them with freshly chopped cilantro and sliced avocado. Drizzle the homemade crema over the stuffed bell peppers for an added burst of flavor.
